Main bioactive components of maitake mushroom
• Polysaccharides. Over the past 30 years, more than 47 bioactive polysaccharide fractions have been isolated and purified from G. frondosa fruiting body, mycelia, and culture media using different extraction methods. The main polysaccharides found in maitake mushrooms are beta-glucans and d-glucans (also known as alpha glucans). Among these bioactive polysaccharides, D-fraction and MD-fraction are considered the most important.
• Proteins and peptides. Several types of bioactive proteins and peptides have been isolated from G. frondosa, including the specific lectin N-acetylgalactosamine (GalNAc), which is also known as Maitake D lectin or MDL for short. These mushrooms also contain ribonucleases, polysaccharide-peptide (PSP) and polysaccharide-K (PSK), ergothionine and enzymes.
